In Chiapas, close to the Guatemalan border, sits the cooperative Union Ramal Santa Cruz. It was founded in 2001 with just 80 members and has now grown to include 537 members – and 450 of those are growing organic certified coffee. Like most of the Mexican coffee farmers, Union Ramal are focused on organic coffee production – with 621 tons of its 696 ton capacity being organic coffees.
The coffees from Chiapas are among the best in Mexico. The 2012 harvest has yielded wonderfully balanced coffee that is sure to please. A sweet, butterscotch fragrance will be noted when you first grind the coffee. This is accompanied by a subtle, yet crisp brightness and lingering notes of lemon and dark chocolate that will stick with you through the finish.
